So I’ve been enjoying a couple of Nine Spoons’ other soups, but I’d ignored this one. Minestrone is usually bland, and I am a meat eater and veggie soups / broths usually just don’t do it for me. But I decided to try it just to see. Best decision I’ve ever made y’all. This is one of the most delicious, hearty, and rich soups I’ve ever tasted. I absolutely devoured it and I will be back for more. The veggies are the perfect cook, the broth is so rich, and the flavor is perfect. I see all the ingredients here, but there’s some sort of extra magic Nine Spoons did. I love them for it!
